2012 Reserve Cabernet Sauvignon, Chalk Hill, Sonoma County
The Cabernet Sauvignon is consistently great from Windsor Oaks. The fruit, originating from the Chalk Hill portion of our property, resembles true “Sonoma Spice” and the talent of winemaker Margaret Davenport. The nose of this wine begins with dark fruit consisting of prune, cherry, a hint of star fruit and fennel. The aroma changes as the wine aerates, giving sweet but spicy notes of pomegranate, cumin, toasted oak, and honey. Blueberry, blackberry, and sandalwood are also heroes in the aroma profile of our Cab. The palate is like a slow freight train. It hits with a supple note of peach, dark cherry, and ripened plum and settles on your palate to “roar through” with the Sonoma Spice essence described above. “Sonoma Spice” is a descriptor of big Sonoma County Bordeau type red wines and Winemaker, Margaret Davenport nails it to the tee. Flavors of dark cherry, licorice, clove, sandalwood, tobacco and star anise round out the finish, with a hints of leather, chocolate, coffee, and perhaps most of all, cedar.
At 14.0% alcohol by volume, this wine has a perfect balance of flavor, volatility, and alcohol. It shines as a representative of the Chalk Hill AVA and will continue to develop and age as you cellar it. Decant at least 60 minutes before serving or can easily be cellared through 2020.
